Keto Pancakes

Image
That's right another Keto Pancake recipe. When I started eating Keto I tried a few recipes online and was not exactly satisfied with the recipes that came before mine. You know the old motto....read the quote from Teddy. Anyhow this is my version and I like any recipe I will continue to work on it until I get it perfect. These were close to being perfect. Extremely light!!!! Ingredients makes about 9  225 grams of Cream-cheese  6 eggs Separated 1 tsp of Vanilla extract 50 grams of melted butter (or coconut oil) 50 grams of Coconut Flour 25 grams of Swerve Liquid Stevia or Stevia to taste (I used a few drops of liquid Stevia) 1 tsp Baking Powder Pinch of Salt Place cream cheese, yolks and Swerve in a blender and pulse few times. Add melted butter and vanilla while machine is running. Alternatively use a whisk. Whip egg whites in separate bowl until until Medium to stiff peaks are formed. In a separate bowl mix...

Low Carb Donuts

Image
Low Carb Donuts to die for (fat % high AKA KETO GONE WILD). No one can ever say I'm not dedicated to the cause. I experimented on myself and my family. I am estimating that I consumed along with my family at least 81 donuts before I was happy with the recipe. The frosting is amazingly good too. Can you imagine having to eat that much stuff just to create a recipe.  Recipe 2/3 cup ground Almond Flour 1/3 cup Coconut Flour 6 large eggs separated 1/2 tsp salt 3/4 tsp baking powder 1/2 tsp of cinnamon or pumpkin spice. Or whatever suits your taste buds at the moment. 1/4 cup of High Fat Coco Powder  or the normal stuff. For non Chocolate version don't use it obviously. This is a base recipe. Just use your imagination. 1 cup of Swerve 1/2 tsp Better Stevia   (it's gives extra umph for sweetness) 5 tbsp Coconut Oil Frosting 2 tbsp Butter (organic and free range blah blah is better) 300 grams of Cream-Cheese (10.5 oz) 60 g...

Meshuga Coconut Curry Sauce

Image
This sauce is the definitely the Meshuggeneh (crazy in Yiddish) of Curry Sauces if you ask me. Truth be told I am not sure this sauce is crazy or it's just me. Probably the latter. This is my third Coconut curry sauce I have made (Recipe One and Two ). Although they are similar they are different. As I am writing this I have an idea for a fourth version.  Two Products I just love!!!! Recipe is as follows... Add all this a blender 2 cans of Coconut Milk 1 Can of Curry Paste(Red,Green or Yellow) 1/2  cup of Coconut oil 1/4 cup of fish sauce 1/2 cup of Honey or replacement sugar 1 Tbl Onion Powder  1 Tbl Garlic Powder (or granulated) 2 Tbl Curry Powder 1 1/2 Tbl of Coriander (whole seeds grounded) Bunch of Cilantro  Cayenne Pepper for extra heat if you need it. 1/2 tsp Xanthan Gum optional - used as a sauce stabilizer or thickener.Great for sauces and dressi...

Keto Asian Coconut Curry Sauce

Image
This is my Keto version of my Asian Coconut Curry Sauce? . Over the years I have made several variants and versions of this incredible sauce that include many Asian herbs, spices and veggies. The recipe that I have decided to write down is my base version. There are other herbs/spices and veggies that go great with my recipe but it's entirely up to you what you add. In fact feel free to change the amounts in the original recipe to create your own. I do this every-time I make it. What makes this sauce Keto is the coconut oil and Stevia for the sweetness.  Keto ASIAN COCONUT CURRY SAUCE 1 can of coconut milk (13-15 oz) 1/2 cup of Coconut oil Stevia to taste 1/3 cup of Fish sauce 1/2 cup of Curry powder 1 Tbl + 1 tsp of Coriander 1 Tbl + 1 tsp of Cumin 1 Tbl + 1 tsp of Garlic Powder (or fresh) Cayenne powder (optional for heat) Use a blender to combine everything.  Add water if to...

The Majestic Artichoke Dip

Image
I have been making this Artichoke dip or a version of it for quite some time. I decided to write it down because it's the bomb. Well truth be told I had to; the  requests for the recipe were overwhelming.  And it doesn't  hurt that I like to write posts and recipes.  This dip also falls under the Keto diet too. If you're into the Keto dieting and cooking you have to give this a try. I'll be the first one to admit that this artichoke dip never tastes the same twice. Why? Well, it's like this; I like mixing things up a bit and I like to try new flavors and ideas. Anyhow, I suggest you take this recipe and use it as a base for other crazy things. Food and recipes are only limited to your imagination and if you think about it for a moment you know I'm right.  I will write up the basic recipe with some notes and explain what I did. Look at the pictures to see and replicate what I did. 1 Red Bell Pepper 1 Me...
