Breakfast is everything to me. It's how we start our days.  It's the mouthful that speaks to me, "How you doin." Sufficed it to say Breakfast is my favorite meal of the day.  I am not sure you will find anything like this recipe in books or even on the web. Like you, I have watched many cooking shows and have read up on breakfast Potato dishes for years, and I at least for me I've never had that ahhh moment where I say this is the one. (Mini-One-HERE) I was watching Netflix a few weeks ago, and they were showcasing some Latin Dishes in Argentina, and one happened to be on the Spanish Tortilla. While there are many versions of the Tortilla, one thing is always a constant: the precooking of the potatoes. The vast majority of the recipes slice the potatoes thin and fry in lots of oil before finishing, which inspired me to make my Lauded Potato Dish. EverClear Limoncello (Sous-Vide)

Oh yes, EverClear-Cello. Yes, I feel your judgment, so stop it 🤣 😳. This Cello is the third one I've done in about three weeks. I made two other ones using 100-proof Vodka, but I wanted to try EverClear. I am so glad I decided to use the High Octane EverClear with an ABV of 95% and a whopping 190 proof. Before I continue, let me give you some of the reasons why I wanted to use Everclear. For one thing, it's neutral-tasting alcohol, so the Lemon comes through.  I think you get more bang for your buck too. Because the ABV is so high, it takes more distilled water to dilute, which raises the yield.  I will provide you calculations at the bottom to determine ABV.  For this batch, I used 3-bottles of EverClear, which equates to  2250 Ml or 2.25 L. Determining The Alcohol Content Of Your Liqueur

The work of Kurt Keydel  and a slight edit by me....... As you begin experimenting with making your own liqueurs, you’ll invariably run up against the “what percentage of alcohol is this?” question. It can be tricky. You can measure the amount of alcohol in a pure base spirit by measuring its specific gravity. This is done with a hydrometer (found in all home brewing supply shops). Once a spirit is diluted with anything besides distilled water, the reading will lose accuracy – all bets are off. You can no longer use a hydrometer to measure the concentration if you’ve added any sugar or any other soluble substance to your base spirit. It won’t be anywhere close to accurate. In calculating the alcohol content of your creation, you must always begin with the alcohol content (Weight of the Alcohol) of the base ingredients. When you think of eating chips, I am sure you're not thinking of chicken. Well, to be honest, I wasn't either. My daughter found this high protein chip and wanted to know what I thought of them because they are keto-friendly. Yes, I keep Keto on and off, but with the way I cook and eat, it's a struggle! Anyhow, I looked into the chips protein source, and it's mostly dairy. I have family members that are lactose intolerant, and I thought to myself I can do way better.  They cost between 2-4 dollars an ounce too. Dang, that's a lot of dough ( think gluten-free ...LOL ) for a dairy chip. I thought to myself dang I can make a low carb-chip too, but I am gonna use chicken as my source for protein (the beef version is coming soon).
