Fig & Goat-Cheese Ice-Cream (Sous-Vide)

Goat-Cheese is an acquired taste. Saying an acquired taste is putting it mildly.  A fondness for Goat-Milk is a preference, at least to me, that is unexplainable. Quick story- My daughter as an infant was allergic (could not digest) to milk, so we had to use Goat-Milk. Oh Lord, it was nasty and expensive. When you think of Goat-Cheese recipes, I'm sure Ice-Cream was never a consideration.  My Goat-Cheese Ice-Cream idea and the family's reaction.  My dialogue with my daughter on Facebook Me-   "You might remember this, but when you were a baby, you could not drink regular milk, so we had to buy Goal-Milk, and you loved every ounce. It cost 5x more than regular milk and your welcome.  Her-  " How does my past love for goat milk correlate with the horrible decision to make goat cheese Ice-Cream? Black-Zaftig-Cherry Ice-Cream (Sous-Vide)

The inspiration for this recipe came from none other than my daughter Sophie aka Sophinator. She's been asking me to make Cherry Ice-Cream for a few months now. Even before Cherries were in season. Simple Cherry Ice-Cream is not my style, so I had to kick it up a bit, which is what I am presenting to you now.  Along the way, I ran into a few bumps, but I worked it all out. Even my Ice-Cream "Bumps" tasted excellent, and no one complained.  One issue I ran into was the lack of Cherry flavor. The addition of the Chocolate paste diluted the character of the Cherries. A simple fix you might think is to increase the Cherries or reduce or even eliminate the Chocolate paste entirely. I wasn't about to remove the Chocolate, and if I increased the percentage of Cherry concentrate, I would throw off the balance of the Ice-Cream. The other stumbling block I ran into was the texture.
